Ingredients (Cupcakes):
1¼ cups all-purpose flour
1 cup sugar
1 tbsp cocoa powder
½ tsp salt
½ tsp baking soda
¾ cup buttermilk
½ cup vegetable oil
1 egg
1 tbsp red food coloring
1 tsp vanilla extract
½ tsp white vinegar
Frosting:
8 oz cream cheese (softened)
½ cup unsalted butter (softened)
2 cups powdered sugar
1 tsp vanilla extract
Instructions:
Preheat oven to 350°F and line a cupcake pan with liners.
Combine dry ingredients. In another bowl, mix wet ingredients. Gradually combine and mix until smooth.
Fill cupcake liners 2/3 full. Bake 18–20 minutes.
For frosting, beat cream cheese and butter until creamy. Add powdered sugar and vanilla; beat until fluffy.
Cool cupcakes and frost generously.
