Ingredients:
2 cups cooked collard greens (seasoned with smoked turkey)
½ cup finely chopped smoked turkey meat
½ cup shredded mozzarella or pepper jack cheese
10 egg roll wrappers
1 egg (beaten for sealing)
Vegetable oil for frying
For Dipping Sauce:
¼ cup mayo
1 tbsp hot sauce
1 tsp honey
½ tsp garlic powder
Instructions:
Mix collard greens, chopped turkey, and cheese in a bowl.
Place 2 tablespoons of the mixture in the center of each egg roll wrapper. Fold sides and roll tightly, sealing with beaten egg.
Heat oil in a skillet over medium-high heat. Fry egg rolls 2–3 minutes per side or until golden brown.
Whisk together dipping sauce ingredients.
Serve hot egg rolls with dipping sauce—crisp outside, soulful inside.
